Resourceful Recipes That We've Found Along The Way
Carrot Buns
~3 cups shredded carrots
~3 eggs
~2 tbsp. freshly ground flax seed
~Salt and pepper
~fresh dill and scallions
*Recommend making more than 1 batch due to them running out quickly*
Mix ingredients all together in big bowl. Use a 1/4 cup to shape the buns and put them on a greased cookie sheet (lard works best). Before cooking, pat down the buns with a fork to make them look like pancakes. Bake in oven at 450, 12 minutes on the first side and 5 minutes on the other. Use for breakfast sandwiches, hamburgers, and lunches.

Busy Mom's Beef Stew
~ 4 lb chuck roast
*~2 chipotle peppers, diced
~bone broth
~carrots
*~onions
*~kale
~mushrooms
*~scallions
*~parsley
~salt and pepper
~garlic
Take your crock pot and fill the bottom up with onions( 2-3). Put the chuck roast on top of the onions and pour enough bone broth into the crock pot to cover the meat. Next, add any vegetables in that you have on hand. We recommend the vegetables listed above. Add salt and pepper, plus the chipotles, and turn it on high for 6 hours or longer. This gives you time to go to work, spend time with your kids, or run a few errands (You get the idea). 6 or so hours later, remove the chuck roast from the stew and place it on a cutting board. When cooled, cut or shred the meat into bite sized pieces and put it back into the broth. If you are using a bone-in roast, take the marrow out of the center of the bone and mash it up and add it to your stew. I know it sounds gross, but it makes the nutritional value of the stew skyrocket (Your kids will never know!). When all of that is done, put the cover back on the crock pot and turn it to low for 1 hour. Serve in a bowl with salt and pepper. Serve as anything from breakfast to lunch, dinner, or even a snack. Goes well in a thermos for work or school (more nutritious and much cheaper than lunch meat).
*Compliments of North Star Farm in Dartmouth. If you don't like spicy, use a milder pepper.
